Zesty Grilled Steak & Avocado Power Bowl

Ingredients
  

For the Steak

  • 1 lb flank steak or sirloin steak about 1-inch thick
  • 2 tbsp olive oil
  • 1 tbsp soy sauce or tamari for gluten-free
  • 1 tsp Worcestershire sauce
  • 1 clove garlic, minced for steak
  • 1/2 tsp black pepper for steak
  • red pepper flakes optional, for a little heat

For the Bowls

  • 2 cups cooked grain e.g., brown rice, quinoa, farro, warm or at room temperature
  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup corn fresh, frozen, or canned & drained
  • 1/4 cup fresh cilantro, chopped for garnish
  • 2 tbsp crumbled feta cheese or cotija optional
  • 2 avocados, sliced or diced

For the Creamy Lime Dressing

  • 1/4 cup plain Greek yogurt or sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp fresh lime juice
  • 1 clove garlic, minced for dressing
  • 1 tbsp fresh cilantro, chopped for dressing
  • 1/4 tsp salt for dressing
  • black pepper for dressing
  • 1-2 tbsp water or milk to thin dressing to desired consistency

Instructions
 

Prepping the Steak

  • Combine olive oil, soy sauce, Worcestershire, minced garlic, black pepper, and red pepper flakes (if using) in a dish or zip-top bag. Add the steak and marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator.

Grilling the Steak

  • Preheat your grill to medium-high heat and lightly oil the grates. Remove the steak from the marinade and grill for 4-6 minutes per side for medium-rare, or longer to your desired doneness.

Resting and Slicing

  • Transfer the grilled steak to a cutting board and let it rest for 5-10 minutes. Once rested, slice the steak thinly against the grain.

Making the Dressing

  • While the steak rests, whisk together Greek yogurt or sour cream, mayonnaise, lime juice, minced garlic, cilantro, salt, and black pepper. Add water or milk to thin the dressing to your preferred consistency.

Assembling the Bowls

  • Divide the cooked grain between two large bowls. Arrange the sliced steak, cherry tomatoes, cucumber, red onion, corn, and avocado on top of the grain.

Serving

  • Drizzle generously with the creamy lime dressing. Garnish with fresh cilantro and crumbled feta or cotija cheese, if desired, and serve immediately.

Notes

For extra flavor, you can add a squeeze of lime juice over the avocado before serving. Adjust the amount of red pepper flakes in the marinade to your preferred spice level. If you don't have a grill, the steak can be pan-seared or broiled to your desired doneness, adjusting cooking times accordingly.
