  • Cook brown rice as directed on the package; typically, combine rice and water in a saucepan, bring to a boil, then simmer covered for 40-45 minutes.
  • While rice cooks, heat olive oil in a skillet, add ground beef, and cook until browned, then drain excess grease.
  • Stir in taco seasoning and 1/4 cup water, then simmer for 3-5 minutes until the sauce thickens.
  • Add rinsed black beans and corn to the beef mixture and heat through for 2-3 minutes.
  • Divide cooked brown rice among bowls, then top with the ground beef and bean mixture.
  • Add desired toppings such as lettuce, tomatoes, cheese, sour cream, salsa, guacamole, cilantro, and a squeeze of fresh lime juice.
