Ingredients
  

Chicken

  • 1 lb boneless, skinless chicken breasts or thighs cut into bite-sized pieces
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce

Vegetables

  • 1 tbsp high smoke point oil vegetable, canola, or peanut
  • 1 cup asparagus spears cut into 1-inch pieces
  • 1/2 red bell pepper sliced

Sauce

  • 1/4 cup fresh lemon juice
  • 2 tbsp soy sauce
  • 2 tsp grated fresh ginger
  • 2 cloves minced garlic
  • 1 tsp honey
  • 1/4 cup chicken broth

For Serving & Garnish

  • Cooked rice for serving
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions
 

Prep Chicken

  • Toss the chicken pieces with cornstarch and soy sauce in a bowl, then set aside.

Make Sauce

  • Whisk together lemon juice, soy sauce, ginger, garlic, honey, and chicken broth in a separate bowl.

Stir-Fry Chicken

  • Heat oil in a large skillet or wok, then stir-fry the chicken until cooked and lightly browned (5-7 minutes). Remove chicken from pan and set aside.

Stir-Fry Veggies

  • Add more oil to the same skillet or wok, then stir-fry asparagus and red bell pepper for 3-5 minutes until crisp-tender.

Combine & Sauce

  • Return chicken to the pan with the vegetables, then pour in the lemon-ginger sauce. Simmer for 1-2 minutes until the sauce thickens and coats the ingredients.

Serve

  • Serve immediately over cooked rice and garnish with sesame seeds and chopped green onions if desired.

Notes

For extra heat, add a pinch of red pepper flakes to the sauce. You can also customize the vegetables based on what you have on hand, such as broccoli, snow peas, or snap peas.
