  • 4 Boneless, Skinless Chicken Breasts (6-8 oz each)
  • 2 tbsp Olive Oil
  • 1 Lemon (zest and juice)
  • 2 cloves Garlic minced
  • 2 tbsp fresh Parsley chopped
  • 1 tbsp fresh Rosemary or Thyme chopped
  • ½ tsp Salt
  • ¼ tsp Freshly Ground Black Pepper

Preparation

  • Pound each chicken breast to an even ¾-inch thickness between plastic wrap, then pat dry.
  • Whisk together olive oil, lemon zest, garlic, parsley, rosemary/thyme, salt, and pepper in a medium bowl to create the marinade.
  • Add the chicken breasts to the marinade, toss to coat, and marinate for 15 minutes at room temperature or up to 30 minutes in the fridge.

Baking

  • Preheat the oven to 400°F (200°C) and place the marinated chicken on a parchment-lined baking sheet.
  • Bake for 18-22 minutes, or until the chicken reaches an internal temperature of 165°F (74°C); squeeze fresh lemon juice over it after baking.

Serving

  • Let the chicken rest for 5 minutes before slicing and serving.

Notes

For extra flavor, marinate the chicken overnight. Adjust herbs to your preference. Serve with a side of roasted vegetables or a fresh salad for a complete meal.
