  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 cups broccoli florets
  • 1 red bell pepper cut into 1-inch pieces
  • 1 zucchini sliced into half-moons

Seasoning & Dressing

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh lemon juice

Garnish (Optional)

  • 2 tablespoons fresh parsley, chopped for garnish

Preparation

  • Preheat your oven to 400°F (200°C) and then combine chicken and all the vegetables in a large bowl. Drizzle with olive oil and spices, tossing to coat everything evenly.

Cooking

  • Spread the seasoned chicken and vegetables in a single layer on a large baking sheet. Roast for 20-25 minutes, until the chicken is fully cooked (165°F/74°C) and the vegetables are tender-crisp.

Finishing and Serving

  • Remove from the oven, squeeze fresh lemon juice over the dish, and garnish with parsley if desired. Serve immediately, perhaps over quinoa or brown rice.

Notes

This versatile recipe can be adapted with different vegetables like asparagus or bell peppers. For an extra kick, add a pinch of red pepper flakes with the other spices. Make sure not to overcrowd the baking sheet to ensure even cooking and browning of the chicken and vegetables.
