Equipment

  • Paper towels
  • Medium bowl
  • Large skillet
  • Parchment-lined baking sheet
  • Air fryer
  • Serving platter

Ingredients

Main Ingredients

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced or 1/2 tsp garlic powder
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.25 cup fresh parsley chopped, for garnish
  • Salt and black pepper to taste

Optional Dipping Sauce

  • Plain Greek yogurt or sour cream for dipping

Instructions

Preparation

  • Pat the chicken pieces dry with paper towels to ensure browning.
  • In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
  • Add chicken to the marinade, toss to coat, and refrigerate for 15-30 minutes for enhanced flavor.

Cooking

  • Preheat your chosen cooking method: pan-frying skillet over medium-high heat, oven to 375°F (190°C), or air fryer to 375°F (190°C).
  • Cook chicken until golden brown and cooked through (internal temperature of 165°F/74°C), adjusting time based on method (3-5 mins per side for pan-frying, 15-20 mins for baking, 10-12 mins for air frying).

Serving

  • Transfer cooked chicken to a platter and garnish with fresh chopped parsley.
  • Serve immediately, optionally with Greek yogurt or sour cream for dipping.

Notes

For extra tenderness, do not overcrowd the pan or baking sheet during cooking. Ensure chicken is cooked through to 165°F (74°C) internal temperature for safety. Consider serving with a fresh green salad for a complete meal.
