Main Ingredients

  • 1/2 cup quick-cook couscous
  • 1/2 cup hot water or chicken broth
  • 1/2 cup pre-cooked chicken shredded or diced
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup cucumber diced
  • 1/4 cup bell pepper any color, diced

Dressing & Garnish

  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • Fresh parsley or mint optional, for garnish, chopped

Preparation

  • Combine quick-cook couscous with hot water or broth in a heatproof bowl, then cover and let it sit for 5 minutes until the liquid is absorbed and the couscous is fluffy.
  • While the couscous cooks, combine the pre-cooked chicken, cherry tomatoes, diced cucumber, and diced bell pepper in a separate bowl.
  • Whisk together olive oil, lemon juice, dried oregano, salt, and pepper in a small bowl to create the dressing.

Assembly

  • Add the fluffed couscous to the bowl with the chicken and vegetables, then pour the prepared dressing over the mixture.
  • Gently toss all ingredients together to ensure everything is evenly coated.
  • Serve the bowl immediately, optionally garnished with fresh chopped parsley or mint.

Notes

For extra flavor, you can toast the dry couscous in a pan with a little olive oil before adding water. Adjust seasoning to your preference.
