Ingredients
  

Salad

  • 1 cup cooked quinoa
  • 1 can chickpeas (15-ounce), drained and rinsed
  • 1/2 cup cucumber diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped

Dressing

  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions
 

Preparation

  • In a large bowl, combine the cooked quinoa and the drained and rinsed chickpeas.
  • Add the diced cucumber, halved cherry tomatoes, thinly sliced red onion, and chopped fresh parsley to the bowl.

Make the Dressing

  • In a small separate bowl, whisk together the lemon juice, olive oil, dried oregano, salt, and black pepper to create the dressing.

Combine and Serve

  • Pour the dressing over the quinoa and chickpea mixture, then toss gently until all ingredients are well combined and coated.
  • Serve immediately, or chill for at least 15 minutes for enhanced flavors, enjoying it as is or over a bed of leafy greens.

Notes

For an extra crunch, consider adding some toasted nuts like almonds or walnuts. You can also customize the herbs by adding fresh mint or dill.
