  • 3 cloves garlic minced
  • 5 oz fresh spinach
  • 1 tsp dried oregano
  • 0.5 tsp dried dill
  • 0.25 cup chicken or beef broth
  • 0.5 lemon juice Juice of 1/2 lemon
  • Salt and freshly ground black pepper to taste

  • 0.25 cup crumbled feta cheese
  • Fresh parsley or mint chopped

Cooking Instructions

  • Heat olive oil in a large skillet over medium-high heat, then brown the ground beef, breaking it up and draining any excess fat.
  • Add diced onion, cook until softened, then stir in minced garlic, dried oregano, and dried dill, cooking until fragrant.
  • Pour in chicken or beef broth, bring to a simmer, and season with salt and pepper.
  • Add fresh spinach to the skillet and stir continuously until it has wilted.
  • Remove the skillet from the heat and stir in the fresh lemon juice.
  • Serve immediately, garnished with crumbled feta cheese and fresh herbs if desired; pairs well with rice, quinoa, or a side salad.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the herbs. Adjust the amount of lemon juice to your preference.
