  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 red onion finely chopped
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 cup broccoli florets
  • 1 chickpeas 15-ounce can, rinsed and drained

Dressing & Garnish

  • 1/4 cup fresh lemon juice
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh oregano chopped (or 1 tsp dried)
  • Salt and black pepper to taste
  • 1/4 cup pumpkin seeds for garnish
  • 1 avocado sliced, for serving (optional)

Instructions
 

Cooking

  • Combine rinsed quinoa and vegetable broth in a medium saucepan, bring to a boil, then simmer until liquid is absorbed and quinoa is fluffy.
  • Heat olive oil in a large skillet over medium heat, then sauté red onion until softened, before adding minced garlic and diced red bell pepper to cook for another 3 minutes.
  • Stir in broccoli florets and chickpeas, cooking for 5-7 minutes until the broccoli is tender-crisp.
  • Add the cooked quinoa, fresh lemon juice, parsley, and oregano to the skillet, and gently toss to combine.
  • Season with salt and black pepper, then serve immediately, garnished with pumpkin seeds and avocado slices if desired.

Notes

For added protein, you can include grilled chicken or tofu. Feel free to customize with your favorite vegetables like spinach or cherry tomatoes.
