  • 1.5 - 2 pounds Salmon Fillets skin-on or off, divided into 4 portions
  • Asparagus tough ends trimmed
  • 1 pint Cherry Tomatoes halved
  • 3 tablespoons Olive Oil
  • 1 Lemon thinly sliced, plus extra wedges for serving
  • 3 cloves Garlic minced
  • 1 teaspoon Dried Dill
  • 1 teaspoon Dried Parsley
  • 0.5 teaspoon Salt or to taste
  • 0.25 teaspoon Black Pepper or to taste
  • 0.25 teaspoon Red Pepper Flakes optional, for a kick

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • In a large bowl, combine the trimmed asparagus and halved cherry tomatoes. Drizzle with 2 tablespoons of olive oil, minced garlic, dried dill, dried parsley, salt, pepper, and red pepper flakes, then toss gently to coat the vegetables evenly.
  • Arrange the seasoned vegetables in a single layer on one side of the baking sheet, ensuring not to overcrowd.
  • Pat the salmon fillets dry and place them on the other side of the baking sheet. Drizzle the salmon with the remaining 1 tablespoon of olive oil, season with salt and pepper, and top each fillet with a thin lemon slice.

Cooking

  • Roast for 12-18 minutes in the preheated oven, or until the salmon is cooked through and the asparagus is tender-crisp.

Serving

  • Remove the sheet pan from the oven and serve immediately with extra lemon wedges.

Cooking times may vary based on the thickness of your salmon fillets. For extra flavor, consider marinating the salmon for 15-30 minutes before roasting.
