  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.25 tsp paprika
  • Salt and black pepper to taste
  • 1 cup cooked brown rice
  • 1 can (15-ounce) black beans rinsed and drained
  • 1 cup corn fresh, frozen, or canned
  • 0.5 red bell pepper finely diced
  • 0.25 red onion thinly sliced
  • 0.5 avocado diced
  • 0.25 cup fresh cilantro chopped
  • 1 lime cut into wedges

Zesty Lime Dressing

  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 0.5 tsp honey or maple syrup optional
  • 0.25 tsp garlic powder
  • salt and pepper Pinch of

Instructions
 

Prepare the Chicken

  • Pat chicken breasts dry and rub with a mix of chili powder, cumin, paprika, salt, and pepper.
  • Cook chicken in a skillet with olive oil for 6-8 minutes per side until cooked through, then rest and slice.

Cook Your Grains

  • Prepare 1 cup of brown rice according to package directions while the chicken cooks.

Prep the Veggies

  • Rinse black beans, cook corn if frozen, and dice red bell pepper, slice red onion, and chop cilantro. Dice avocado just before serving to prevent browning.

Make the Zesty Lime Dressing

  • Whisk together olive oil, lime juice, honey (optional), garlic powder, salt, and pepper in a small bowl.

Assemble the Bowl

  • Divide cooked brown rice between two bowls and arrange sliced chicken over rice.
  • Add spoonfuls of black beans, corn, diced red bell pepper, sliced red onion, and avocado around the chicken.
  • Garnish with fresh cilantro and a lime wedge, then drizzle with Zesty Lime Dressing and serve immediately.

Notes

For an extra kick, add a pinch of cayenne pepper to the chicken seasoning. You can also customize the vegetables based on your preferences, such as adding cherry tomatoes or a sprinkle of crumbled feta. If meal prepping, store the dressing separately and add just before serving to maintain freshness and prevent the rice from getting soggy.
