Ingredients
  

Main Ingredients

  • 1 can Canned chickpeas rinsed and drained
  • cups Mixed greens spinach, kale
  • 1 cup Cherry tomatoes halved
  • 1/2 cup Cucumber diced
  • 1/4 cup Red onion thinly sliced
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Kalamata olives pitted and halved

Dressing

  • 2 tbsp Olive oil
  • 1 tbsp Red wine vinegar
  • 1/2 tsp Dried oregano
  • a pinch Salt
  • a dash Black pepper

Optional Garnish

  • Lemon wedges for serving

Instructions
 

Preparation

  • In a medium bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives.
  • In a small separate bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.

Assembly

  • Add the mixed greens to a meal prep container or serving bowl.
  • Spoon the chickpea and vegetable mixture over the greens.
  • Pour the dressing over the bowl just before serving or pack it separately.
  • If desired, garnish with a lemon wedge for extra zest.

Notes

Pack the dressing separately if preparing for meal prep to prevent greens from becoming soggy. A squeeze of fresh lemon adds a burst of extra flavor just before eating.
