  • 2-3 pounds Boneless, Skinless Chicken Breasts or Thighs
  • 1 cup Chicken Broth
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Oregano
  • ½ teaspoon Salt or to taste
  • ¼ teaspoon Black Pepper or to taste
  • 1 Lemon thinly sliced
  • ½ cup Kalamata Olives pitted and halved
  • 1 cup Cherry Tomatoes halved

Preparation

  • If using larger chicken breasts, cut them in half for even cooking. In a small bowl, combine onion powder, garlic powder, smoked paprika, oregano, salt, and pepper.

Cooking

  • Place chicken in a single layer in the slow cooker and sprinkle with the seasoning mixture. Pour chicken broth over the chicken, then arrange lemon slices, olives, and tomatoes on top.
  • Cover and cook on LOW for 3-4 hours or on HIGH for 2-3 hours, until the chicken is cooked through and easily shreds.

Finishing

  • Remove the cooked chicken and shred it with two forks. Return the shredded chicken to the crockpot and stir it into the flavorful juices and vegetables before serving warm.

Notes

Cooking on low heat typically results in more tender chicken. This shredded chicken is versatile and can be used in wraps, salads, or served with rice or pasta.
