Zesty Mediterranean Foil-Baked Salmon

This Zesty Mediterranean Foil-Baked Salmon is a healthy and flavorful meal that cooks in under 20 minutes with minimal cleanup. Salmon fillets are baked in foil packets with cherry tomatoes, Kalamata olives, feta, lemon, and herbs.

  • 4 Salmon fillets (about 6 oz each), skin on or off
  • 1 cup Cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and halved
  • 1/4 cup Feta cheese crumbled
  • 1 teaspoon Dried oregano
  • 2 tablespoons Olive oil
  • 1 Lemon thinly sliced
  • 2 tablespoons Fresh parsley chopped (for garnish)
  • Salt to taste
  • Black pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and prepare four large pieces of aluminum foil, approximately 12x18 inches each.
  • Pat the salmon fillets dry and place one in the center of each foil piece.
  • Drizzle olive oil over each fillet and season with dried oregano, salt, and pepper.
  • Evenly distribute the halved cherry tomatoes and Kalamata olives around and on top of each salmon fillet.
  • Place a few thin slices of lemon on top of each fillet, then sprinkle with crumbled feta cheese.

Cooking

  • Seal the foil packets by bringing the long sides together and folding them down tightly, then crimp the short ends securely to prevent steam from escaping.
  • Place the packets on a baking sheet and bake for 12-18 minutes, or until the salmon flakes easily and reaches an internal temperature of 145°F (63°C).
  • Carefully open the foil packets, being mindful of the steam, and garnish with fresh chopped parsley before serving.

Notes

For an extra touch of flavor, you can add a sprig of fresh dill or thyme to each packet before sealing. Be careful when opening the hot foil packets, as steam can escape quickly.
