  • 1 lb 93/7 lean ground turkey
  • 1 tablespoon olive oil
  • 1/2 red onion finely chopped
  • 2 cloves garlic minced
  • 1 bell pepper any color, diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin

  • 1/2 cup Kalamata olives pitted and halved
  • 1/4 cup sun-dried tomatoes chopped
  • 1/2 cup chicken or vegetable broth
  • Salt and freshly ground black pepper to taste

For Serving

  • Fresh parsley or cilantro for garnish
  • Cooked couscous or quinoa for serving
  • Tzatziki or Greek yogurt for topping (optional)
  • Crumbled feta cheese for topping (optional)

Instructions
 

Preparation

  • Chop the red onion, mince the garlic, dice the bell pepper, halve the olives, and chop the sun-dried tomatoes.

Cooking

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook for 5-7 minutes until browned, then drain excess fat.
  • Push turkey to one side and add chopped red onion and diced bell pepper to the empty side, cooking until softened (3-5 minutes). Add minced garlic and cook for another minute until fragrant.
  • Stir turkey with aromatics, then add oregano, cumin, and cinnamon, stirring for 30 seconds to bloom the spices.
  • Stir in Kalamata olives and chopped sun-dried tomatoes.
  • Pour in broth, bring to a simmer, then reduce heat to low and cook for 5-7 minutes to meld flavors and reduce liquid.

Serving

  • Adjust seasoning with salt and pepper. Stir in fresh parsley or cilantro. Serve hot over couscous or quinoa with tzatziki or Greek yogurt and crumbled feta cheese, if desired.

Notes

For extra flavor, marinate the turkey in a little lemon juice and a pinch of sumac before cooking. Adjust the spice levels to your preference, adding a pinch of red pepper flakes for some heat. You can also customize your bowl with other toppings like hummus, cucumber, or roasted vegetables.
