Ingredients
  

Main Ingredients

  • 2 large eggs
  • 1 tbsp milk
  • Salt and freshly ground black pepper to taste
  • 1 tsp olive oil or butter
  • 1/4 cup fresh spinach roughly chopped
  • 2 tbsp crumbled feta cheese
  • Pinch red pepper flakes optional

For Serving

  • 1 slice whole-wheat toast or pita bread

Instructions
 

Preparation

  • Whisk together eggs, milk, salt, and pepper in a small bowl until well combined.
  • Heat olive oil or butter in a non-stick frying pan over medium heat.

Cooking

  • Pour the egg mixture into the hot pan; as eggs set, gently push towards the center with a spatula.
  • Once eggs are mostly set but still moist, add chopped spinach and crumbled feta cheese.
  • Gently fold for 30 seconds to 1 minute until spinach wilts and feta warms through; do not overcook.

Serving

  • Remove from heat, sprinkle with red pepper flakes if desired, and serve immediately with toast or pita bread.

Notes

For an extra kick, add a squeeze of fresh lemon juice before serving.
