Instructions
Preparation
Whisk together eggs, milk, salt, and pepper in a small bowl until well combined.
Heat olive oil or butter in a non-stick frying pan over medium heat.
Cooking
Pour the egg mixture into the hot pan; as eggs set, gently push towards the center with a spatula.
Once eggs are mostly set but still moist, add chopped spinach and crumbled feta cheese.
Gently fold for 30 seconds to 1 minute until spinach wilts and feta warms through; do not overcook.
Serving
Remove from heat, sprinkle with red pepper flakes if desired, and serve immediately with toast or pita bread.
Notes
For an extra kick, add a squeeze of fresh lemon juice before serving.
