Ingredients
  

Main Ingredients

  • 6-8 medium shrimp, peeled and deveined
  • 1 tsp olive oil
  • 0.5 tsp dried oregano
  • Salt and black pepper to taste
  • 0.5 cup cooked quinoa
  • 0.25 cup chopped cucumber
  • 0.25 cup cherry tomatoes halved
  • 2 Kalamata olives sliced
  • 1 tbsp crumbled feta cheese
  • 1 tbsp fresh parsley, chopped for garnish

Lemon-Herb Vinaigrette

  • 1 tsp olive oil
  • 1 tsp lemon juice
  • dried oregano pinch
  • Dijon mustard pinch
  • salt & pepper

Instructions
 

Preparation

  • Pat the shrimp dry and toss them with olive oil, oregano, salt, and pepper.
  • Heat a skillet over medium-high heat and cook the seasoned shrimp for 1-2 minutes per side until they are pink and opaque.

Assembly

  • Whisk together all the lemon-herb vinaigrette ingredients in a small bowl.
  • Place the cooked quinoa at the bottom of a serving bowl.
  • Arrange the shrimp, cucumber, cherry tomatoes, Kalamata olives, and feta cheese on top of the quinoa.
  • Drizzle the lemon-herb vinaigrette over the assembled bowl.
  • Garnish with fresh chopped parsley and serve immediately.

Notes

For extra flavor, marinate the shrimp for 10-15 minutes before cooking. You can also add other vegetables like bell peppers or spinach to customize your bowl.
