Ingredients
  

Main

  • 1 lb Shrimp raw, peeled, and deveined
  • 1 cup cooked quinoa
  • 1 bell pepper any color, chopped
  • 1/2 red onion thinly sliced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese Optional

Instructions
 

Preparation

  • Thaw and pat dry frozen shrimp.
  • Marinate shrimp with olive oil, lemon juice, garlic, oregano, salt, and pepper for 15-20 minutes.
  • Prepare quinoa as per package instructions.
  • Chop bell pepper, slice red onion, and halve cherry tomatoes.

Cooking & Assembly

  • Cook marinated shrimp in a skillet over medium-high heat for 2-3 minutes per side until opaque.
  • Divide quinoa among meal prep containers.
  • Arrange shrimp and vegetables over the quinoa.
  • Garnish with fresh parsley and optional feta cheese.

Storage

  • Cool completely, then refrigerate in airtight containers for up to 3-4 days. Reheat gently or enjoy chilled.

Notes

For best results, do not overcook the shrimp. Adjust seasoning to your preference. This recipe is excellent for weekly meal prepping!
