  • 1 lb Lean Ground Turkey 93/7 or 96/4
  • 1 tbsp Olive Oil
  • 1 Medium Red Onion diced
  • 3 cloves Garlic minced
  • 1 cup Zucchini chopped
  • 1 cup Bell Peppers (red and yellow) chopped
  • 1/2 cup Kalamata Olives pitted and halved
  • 1 can Diced Tomatoes 14.5 oz, undrained
  • 1 tsp Dried Oregano
  • 1/2 tsp Smoked Paprika
  • Lemon Juice Juice of 1/2 Lemon
  • Salt and Black Pepper to taste

For Garnish (Optional)

  • Fresh Parsley chopped
  • Feta Cheese crumbled

Instructions
 

Cooking Steps

  • Heat a large non-stick skillet or cast-iron pan over medium-high heat, then add the olive oil.
  • Add the ground turkey to the hot skillet, breaking it up and cooking until browned; drain any excess fat.
  • Push turkey to one side, add diced red onion to the other, cook for 3-4 minutes until soft, then add minced garlic and cook for another minute.
  • Stir together the turkey, onion, and garlic, then add zucchini, bell peppers, olives, diced tomatoes, oregano, paprika, and season with salt and pepper.
  • Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 8-10 minutes until vegetables are tender-crisp.
  • Stir in the fresh lemon juice.
  • Taste and adjust seasonings, then garnish with fresh parsley and crumbled feta cheese if desired, and serve hot.

Notes

For an extra kick, add a pinch of red pepper flakes with the spices. This dish can be served over rice, quinoa, or with warm pita bread.
