Ingredients
  

Pizza Base

  • 1 pre-made cauliflower pizza crust

Sauce

  • 1/3 cup pesto

Cheese

  • 1 cup shredded dairy-free mozzarella or regular mozzarella

Vegetables

  • 1/2 cup spinach
  • 1/4 cup artichoke hearts chopped
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup Kalamata olives pitted and sliced
  • 2 tablespoons crumbled feta cheese optional

Seasoning

  • Fresh basil leaves for garnish
  • lemon juice a squeeze, optional
  • 1/4 teaspoon dried oregano

Instructions
 

Preheat & Prep

  • Preheat your oven to 400-425°F (200-220°C) according to the cauliflower crust package directions and place the crust on a preheated baking sheet or pizza stone.

Pre-bake (if required)

  • If the cauliflower crust requires a pre-bake, bake for 5-8 minutes to ensure crispiness before adding toppings.

Assemble

  • Spread pesto evenly over the pre-baked (or raw) crust, then sprinkle with mozzarella, spinach, chopped artichoke hearts, sun-dried tomatoes, sliced Kalamata olives, and optionally feta cheese and dried oregano.

Bake

  • Bake for 10-18 minutes, or until the cheese is melted and bubbly and the crust edges are golden and firm.

Garnish & Serve

  • Garnish with fresh basil leaves and a squeeze of lemon juice before serving for a burst of freshness.

Notes

For extra flavor, lightly toast the cauliflower crust before adding toppings. Adjust vegetable quantities to your preference. This pizza is excellent for a light dinner or appetizer.
