Zesty Santa Maria Tri-Tip Salsa

Ingredients
  

Salsa

  • 2-3 Roma tomatoes finely diced
  • 1/2 red onion finely diced
  • 1-2 jalapeños seeded and finely minced (adjust to your spice preference)
  • 1/2 cup fresh cilantro finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon dried oregano
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions
 

Preparation

  • In a medium bowl, combine the diced Roma tomatoes, red onion, minced jalapeños, chopped cilantro, and minced garlic.
  • In a small bowl, whisk together olive oil, fresh lime juice, apple cider vinegar, and dried oregano.
  • Season the dressing with salt and freshly ground black pepper to taste.
  • Pour the prepared dressing over the vegetable mixture.
  • Gently toss all the ingredients until they are well combined.
  • Cover the bowl and refrigerate the salsa for at least 30 minutes to allow the flavors to meld. For a deeper flavor, marinate for a few hours.

Notes

For an extra kick, leave some of the jalapeño seeds in. This salsa is best served fresh but can be stored in the refrigerator for up to 3 days.
