These Zesty Southwest Shredded Chicken Bites are a flavorful and easy-to-make appetizer, perfect for any gathering. Shredded chicken is combined with a creamy, spiced mixture and baked in crispy phyllo shells.

Ingredients
  

Filling

  • 2 cups cooked shredded chicken
  • 4 oz cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/4 cup finely diced celery
  • 1/4 cup finely diced red bell pepper
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper optional, for extra heat
  • Salt and black pepper to taste

Shells & Garnish

  • 1 package (8 oz, 15 count) mini phyllo shells
  • Optional garnish: extra cilantro, a dollop of sour cream or crema

Instructions
 

Preparation

  • In a medium bowl, combine softened cream cheese and mayonnaise, mixing until smooth.
  • Add shredded chicken, diced celery, red bell pepper, chopped cilantro, chili powder, ground cumin, garlic powder, and optional cayenne pepper to the bowl.
  • Mix all ingredients thoroughly until well combined, then season with salt and black pepper to taste.

Baking

  • Preheat your oven to 350°F (175°C) and arrange mini phyllo shells on a baking sheet.
  • Carefully spoon the chicken mixture generously into each phyllo shell.
  • Bake for 10-12 minutes, or until phyllo shells are lightly golden and the filling is heated through.

Serving

  • Garnish with extra fresh cilantro or a small dollop of sour cream/crema, if desired, before serving warm.

Notes

These bites are best served warm. You can prepare the filling ahead of time and assemble/bake just before serving. For a little heat, don't skip the cayenne pepper!
