  • 1 lb sirloin, flank, or your preferred cut (cut into 1-inch pieces) Steak
  • 1 tablespoon Olive Oil
  • 1 Yellow Onion small, diced
  • 2 Garlic cloves, minced
  • 1 cup Chicken Broth
  • 1 Evaporated Milk can (12 oz)
  • 1 cup Cheddar Cheese shredded
  • 1 cup Monterey Jack Cheese shredded
  • 1 Green Chiles can (4 oz), diced, undrained
  • 1 Jalapeño deseeded and minced (optional)
  • 3 cups Cooked White Rice warm
  • Salt and Black Pepper To taste
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Cumin

Garnish & Toppings

  • 1/4 cup Fresh Cilantro chopped, for garnish
  • Optional Toppings Sliced avocado, sour cream, extra jalapeño slices, lime wedges

Cooking Steps

  • Pat the steak pieces dry and season them generously with salt, pepper, chili powder, and cumin.
  • Heat olive oil in a large skillet over medium-high heat, then sear the seasoned steak for 2-3 minutes per side until browned, and set aside.
  • Reduce heat to medium, add diced onion, and cook for 3-5 minutes until softened; then add minced garlic and jalapeño, cooking for another minute until fragrant.
  • Pour in chicken broth, scrape up any browned bits, and bring to a gentle simmer.
  • Stir in evaporated milk and green chiles, then gradually add shredded cheddar and Monterey Jack cheeses, stirring constantly until melted and smooth; keep heat low to prevent breaking.
  • Gently fold the seared steak pieces into the queso sauce.
  • Serve the steak and queso mixture immediately over warm cooked white rice, garnishing with fresh chopped cilantro and any desired toppings.

Notes

For extra spice, do not deseed the jalapeño. Adjust cheese quantities to your preference for a thicker or thinner queso. Fresh lime juice brightens the flavors.
