  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 0.5 cup milk
  • 1.5 cups water
  • 1.5 cups uncooked instant rice
  • 2 cups shredded cheddar cheese divided
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation

  • Preheat oven to 375°F (190°C). Brown ground beef, onion, and garlic in a large skillet; drain excess fat.
  • Stir in cream of mushroom soup, milk, water, rice, salt, and pepper.
  • Bring to a boil, then reduce heat, cover, and simmer for 10 minutes, or until liquid is absorbed and rice is tender.
  • Mix in 1 cup of shredded cheddar cheese.
  • Transfer the mixture to a 9x13 inch baking dish and top with the remaining 1 cup of shredded cheddar cheese.
  • Bake for 15-20 minutes, or until the cheese is melted and bubbly.

Notes

For a richer flavor, you can substitute beef broth for water. Feel free to add frozen mixed vegetables during the simmering step for extra nutrients and color.
