  • 4 pieces Boneless, skinless chicken breasts or thighs
  • 2 tbsp Olive oil
  • 4 cloves Garlic, freshly minced
  • 1.5 cups Cherry or grape tomatoes
  • 0.5 cup Balsamic vinegar
  • 0.5 cup Chicken broth
  • 5 oz Fresh spinach
  • Salt to taste
  • Freshly ground black pepper to taste

  • Fresh basil or parsley

Cooking Steps

  • Pat the chicken dry, then season generously with salt and pepper.
  • Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
  • Cook the chicken for 5-7 minutes per side until golden brown and cooked through, then remove and set aside.
  • Reduce heat to medium, add remaining olive oil if needed, and cook minced garlic for 30 seconds until fragrant.
  • Stir in cherry tomatoes, cook for 5-7 minutes, and gently press some to burst.
  • Pour in balsamic vinegar and chicken broth, bring to a simmer, scraping up browned bits, and cook until slightly thickened (3-5 minutes).
  • Stir in fresh spinach and cook until completely wilted (1-2 minutes).
  • Return chicken to the skillet, spoon sauce over it, and garnish with fresh basil or parsley if desired. Serve immediately.

Notes

This recipe is perfect for a quick weeknight meal. Ensure your skillet is large enough to comfortably hold both the chicken and vegetables.
