Ingredients
  

For the BBQ Salmon

  • 1.5 lbs Salmon Fillets skin on or off, divided into 4 portions (e.g., wild-caught Sockeye or Atlantic salmon)
  • BBQ Rub Your favorite store-bought or homemade rub (balance of sweet, smoky, and a little spice)
  • Olive Oil A touch

For the Mango Avocado Salsa

  • 2 medium Ripe Mangoes diced
  • 2 Avocados ripe, diced
  • 1/4 cup Red Onion finely diced
  • 1/4 cup Cilantro chopped
  • 1 Jalapeño minced (remove seeds for less heat, leave for more)
  • 2 tablespoons Lime Juice freshly squeezed
  • Salt To taste
  • Pepper To taste

For the Bowls

  • 4 cups Cooked Grains e.g., brown rice, quinoa, farro

Optional Garnishes

  • Extra cilantro
  • Sriracha mayo Drizzle of
  • Lime wedge

Instructions
 

Prep the Salmon

  • Preheat your oven to 400°F (200°C) or prepare your grill for medium-high heat.
  • Pat salmon fillets dry with paper towels, brush with olive oil, and generously sprinkle with BBQ rub, pressing to adhere.

Cook the Salmon

  • For oven method, bake salmon on a parchment-lined baking sheet for 12-18 minutes until cooked through and easily flaked.
  • For grill method, grill skin-side down for 5-7 minutes, then flip and grill for another 3-5 minutes until cooked through.

Make the Mango Avocado Salsa

  • While salmon cooks, combine diced mango, avocado, red onion, cilantro, and minced jalapeño in a bowl.
  • Pour in lime juice, gently toss, and season with salt and pepper to taste.

Assemble the Bowls

  • Divide cooked grains among four bowls, then top each with a salmon fillet.
  • Generously spoon the fresh mango avocado salsa over and around the salmon.

Garnish and Serve

  • Add optional garnishes like extra cilantro or a lime wedge, then serve immediately.

Notes
