  • 1.5 lbs Fresh Salmon Fillet skin removed
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 0.5 tsp Paprika
  • 1/2 lemon Lemon zest

Cooking

  • Preheat your oven to 400°F (200°C) or prepare a pan for searing over medium-high heat. Cut the salmon fillet into 1-inch bite-sized cubes and pat them dry with a paper towel.
  • In a medium bowl, combine the salmon cubes with olive oil, salt, black pepper, garlic powder, paprika, and lemon zest, ensuring they are evenly coated.
  • If baking, arrange the seasoned salmon bites on a parchment-lined baking sheet and bake for 10-12 minutes, or until cooked through.
  • If pan-searing, heat olive oil in a large non-stick skillet over medium-high heat, then sear the salmon bites for 2-3 minutes per side until golden brown and cooked.
  • Remove the salmon from heat and allow it to cool completely to room temperature before storing.

Storage

  • For refrigeration, place a paper towel in an airtight container, arrange cooled salmon bites in a single layer or stack with parchment paper, then seal and refrigerate for up to 3-4 days.
  • For freezing, arrange cooled salmon bites in a single layer on a parchment-lined baking sheet and flash freeze for 1-2 hours until firm. Transfer to a heavy-duty freezer bag, remove air, label, and freeze for up to 2-3 months.

Notes

These salmon bites are delicious on their own, in salads, or as part of a main course. Adjust seasoning to your preference, and ensure not to overcook the salmon to keep it tender and juicy.
