Equipment

  • Large mixing bowl
  • Whisk
  • Non-stick griddle or cast-iron tawa
  • Ladle

Ingredients

Main Ingredients

  • 1 cup Whole Wheat Flour (Atta)
  • 1.5 - 2 cups Water or as needed for consistency
  • 1 Onion small, finely chopped
  • 1-2 Green Chilies minced (adjust to spice preference)
  • 1 Ginger inch piece, grated or finely minced
  • 1 teaspoon Cumin Seeds (Jeera)
  • 1 teaspoon Salt or to taste
  • 2 tablespoons Coriander Leaves (Cilantro) freshly chopped (optional)
  • Oil or Ghee For greasing and cooking

Instructions

Preparation

  • In a large bowl, whisk together whole wheat flour and salt, then gradually add water to form a smooth, thin batter.
  • Stir in the chopped onion, green chilies, grated ginger, cumin seeds, and coriander leaves (if using), then let the batter rest for 10-15 minutes.

Cooking

  • Heat and lightly grease a non-stick griddle or cast-iron tawa over medium-high heat until hot.
  • Pour a ladleful of batter onto the hot griddle and quickly spread it outwards in a circular motion to create a thin, even layer.
  • Drizzle oil or ghee around the edges and over the dosa, cooking for 2-3 minutes until crispy and golden brown.
  • Optionally, flip and cook the dosa for another minute, or fold it in half on the griddle for extra crispiness.
  • Remove the cooked dosa and repeat the process for the remaining batter, greasing the griddle before each new dosa.

Notes

For a crispier dosa, ensure the griddle is hot enough and spread the batter very thin. You can adjust the amount of green chilies to your preferred spice level. Serve hot with chutney or sambar.
