Classic Xmas Food, Christmas Food, Christmas Food Dinner - Spiced Cranberry & Orange Tart

Ingredients
  

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 1-2 tablespoons ice water

Filling

  • 2 cups fresh or frozen cranberries
  • ¾ cup granulated sugar
  • ½ cup orange juice freshly squeezed preferred
  • 1 teaspoon orange zest
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • cloves Pinch of
  • 2 tablespoons cornstarch dissolved in 2 tablespoons cold water

Instructions
 

For the Crust

  • Pulse flour, cold butter, and sugar in a food processor until coarse crumbs form, then add egg yolk and ice water, pulsing until the dough comes together. Form into a disc, wrap, and chill for at least 30 minutes.
  • Preheat oven to 375°F (190°C), roll out the chilled dough, fit it into a 9-inch tart pan, trim the edges, prick the bottom with a fork, and bake for 15-20 minutes until lightly golden, then let cool.

For the Filling

  • Combine cranberries, sugar, orange juice, zest, cinnamon, ginger, and cloves in a saucepan and simmer over medium heat, stirring occasionally, until the cranberries burst (5-7 minutes).
  • Stir in the cornstarch slurry, cook for 1-2 minutes until thick, then remove from heat and cool slightly.
  • Pour the cooled filling into the pre-baked tart shell and chill for 2-3 hours to allow it to set before serving.

Notes

For a richer flavor, consider adding a splash of Grand Marnier or Cointreau to the filling before chilling.
