Festive Cranberry & Brie Bites

These delightful Festive Cranberry & Brie Bites are an easy and elegant appetizer, perfect for holiday gatherings or any special occasion. Flaky puff pastry cups are filled with sweet cranberry sauce, creamy Brie, and a hint of fresh rosemary, then baked to golden perfection.

Main Ingredients

  • 1 sheet frozen puff pastry (14 oz)
  • 1/2 cup whole berry cranberry sauce (store-bought or homemade)
  • 4 oz Brie cheese rind removed, cut into small cubes (about 1/2-inch)
  • 1 tablespoon fresh rosemary finely chopped
  • 1 egg beaten (for egg wash)

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Unroll the thawed puff pastry onto a lightly floured surface, re-rolling gently if needed to smooth creases.
  • Cut the puff pastry into 24 even squares using a sharp knife or pizza cutter.
  • Place each puff pastry square into a mini muffin tin cup, gently pressing to form a cup.

Assembly and Baking

  • Place a small spoonful of cranberry sauce into the bottom of each pastry cup.
  • Top the cranberry sauce with one or two small cubes of Brie cheese.
  • Sprinkle a tiny pinch of fresh chopped rosemary over the Brie in each cup.
  • Brush the edges of the puff pastry with the beaten egg wash.
  • Bake for 12-15 minutes, or until the puff pastry is golden brown and puffed, and the Brie is melted and bubbly.

Serving

  • Remove from oven and cool in the muffin tin for a few minutes before transferring to a wire rack to cool slightly. Serve warm or at room temperature.

Notes

For extra festive flair, garnish with a tiny sprig of fresh rosemary before serving. These bites can be assembled ahead of time and baked just before serving for a warm, fresh appetizer. Store leftovers in an airtight container for up to 2 days.
