Hearty Crock Pot Green Enchilada Chicken Soup

This hearty slow cooker green enchilada chicken soup is packed with flavor and incredibly easy to make. Just combine ingredients in your crock pot and let it cook to tender perfection, then shred the chicken and enjoy a comforting meal.

Main Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 can green enchilada sauce 19 oz
  • 4 cups chicken broth
  • 1 can diced green chiles 4 oz, mild or medium
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 0.5 tsp chili powder
  • 0.25 tsp dried oregano
  • Salt and black pepper to taste

Optional Creaminess

  • 4 oz cream cheese, softened
  • 0.5 cup heavy cream or half-and-half

Optional Toppings

  • shredded Monterey Jack or cheddar cheese
  • sour cream or Greek yogurt
  • chopped fresh cilantro, diced avocado
  • tortilla strips or crushed tortilla chips

Instructions
 

Cooking Steps

  • Lightly grease the inside of your slow cooker pot with cooking spray or olive oil.
  • Place the chicken breasts or thighs in a single layer at the bottom of the prepared slow cooker.
  • Top the chicken with the chopped onion and minced garlic.
  • Pour the green enchilada sauce, chicken broth, and diced green chiles over the chicken and vegetables.
  • Sprinkle in the cumin, chili powder, oregano, salt, and black pepper, then gently stir to combine.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is very tender.
  • Remove and shred the chicken using two forks, then return it to the soup.
  • Optionally, stir in the softened cream cheese and heavy cream until melted and combined for a richer consistency.
  • Taste the soup and adjust seasonings like salt, pepper, or chili flakes as needed.
  • Ladle the hot soup into bowls and garnish with your preferred toppings.

Notes

For an extra kick, add a pinch of chili flakes with the other seasonings. If you prefer a thicker soup, you can remove about 1 cup of the soup and blend it before returning it to the slow cooker.
