  • 1 canned diced tomatoes (14.5 oz) can, undrained
  • 2 tablespoons tomato paste
  • 1/4 cup sun-dried tomatoes packed in oil, drained and chopped
  • 3 cloves garlic minced
  • 1/2 onion small, finely diced
  • 3 cups vegetable broth
  • 2 cups baby spinach fresh
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese grated, plus more for serving
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (for a more pronounced kick)

  • Heat olive oil in a large pot. Sauté onion for 3-4 minutes until softened, then add minced garlic and cook for one more minute until fragrant.
  • Stir in diced tomatoes, tomato paste, chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  • Add pasta to the pot and pour in vegetable broth, ensuring the pasta is mostly submerged.
  • Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes, stirring occasionally, until pasta is al dente.
  • Remove from heat, stir in spinach until wilted, then incorporate heavy cream and Parmesan cheese until creamy.
  • Season with salt and pepper. Garnish with fresh basil and serve immediately. Add more broth if needed to adjust sauce consistency.

Notes

For extra flavor, you can add a sprinkle of nutritional yeast for a cheesy umami boost. Adjust the amount of red pepper flakes to your preferred spice level. A squeeze of lemon juice at the end can brighten up the flavors.
