Quick Chicken & Broccoli Stir-Fry

Ingredients
  

Main Ingredients

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 4 cups broccoli florets
  • 1 red bell pepper, thinly sliced
  • 0.5 onion, thinly sliced

Sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water

Other

  • 2 tablespoons olive oil
  • Cooked rice for serving
  • Sesame seeds for garnish (optional)

Instructions
 

Preparation

  • In a small bowl, combine soy sauce, honey, ginger, and minced garlic; set aside.

Cooking

  • Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
  • Add chicken and cook for 3-5 minutes, until cooked through and lightly browned, then remove from the skillet.
  • Add the remaining 1 tablespoon of olive oil to the skillet, then stir-fry broccoli, bell pepper, and onion for 5-7 minutes until tender-crisp.
  • Return the cooked chicken to the skillet, pour the prepared sauce over the chicken and vegetables, and stir.
  • Add the cornstarch slurry and stir constantly until the sauce thickens and coats all ingredients.

Serving

  • Serve immediately over cooked rice and garnish with sesame seeds, if desired.

Notes

For extra spice, add a pinch of red pepper flakes to the sauce. You can also customize the vegetables based on what you have on hand, such as snap peas, carrots, or mushrooms.
