  • 2 medium English cucumber
  • 2 cloves garlic
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1/2 tsp red pepper flakes
  • 1/4 cup fresh cilantro chopped

Preparation

  • Wash and dry the cucumbers, then place them on a cutting board and smash gently with the side of a large knife or a rolling pin.
  • Cut the smashed cucumbers into bite-sized pieces and transfer them to a bowl.
  • Mince the garlic and add it to the bowl with the cucumbers.
  • In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, and red pepper flakes to create the dressing.
  • Pour the dressing over the cucumbers and garlic, then add the chopped cilantro.
  • Toss everything together until well combined and serve immediately, or chill for a bit before serving for a cooler salad.

Notes

For extra flavor, you can let the salad marinate in the fridge for 15-30 minutes before serving. Adjust the red pepper flakes to your preferred spice level.
